Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 pound cheese tortellini, fresh or frozen
  • 1 cup baby spinach leaves
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes, optional
  • Fresh parsley, chopped, for garnish

Instructions

  1. 1. Heat the olive oil in a large skillet over medium heat and add the sausage. Break it into small pieces and cook for 5 to 7 minutes until no longer pink. Remove the sausage and set aside.
  2. 2. In the same skillet, add the diced onion and cook until translucent, about 3 to 4 minutes. Add the minced garlic and sauté for 1 minute.
  3. 3. Pour in the chicken broth and heavy cream, stir, and bring to a simmer.
  4. 4. Add the tortellini to the skillet and cook according to package instructions, about 5 to 7 minutes.
  5. 5. Return the cooked sausage to the skillet. Add the baby spinach and stir until wilted. Then stir in the Parmesan cheese until the sauce is creamy. Season with salt, pepper, and red pepper flakes if desired.
