Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 4 cups cooked rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, for garnish
  • For the Tzatziki:
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • Salt to taste

Instructions

  1. In a bowl, combine chicken strips, olive oil, oregano, salt, and pepper. Marinate for 15 minutes.
  2. In a skillet, heat a bit of olive oil over medium heat and cook the chicken for about 5-7 minutes or until fully cooked.
  3. Prepare the Tzatziki by mixing all sauce ingredients in a bowl until well combined.
  4. Assemble the bowls by placing a base of rice, then adding the chicken, veggies, feta, and a generous dollop of Tzatziki on top.
  5. Garnish with fresh parsley before serving.
