Ingredients

  • 1 lb chicken breast, diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine diced chicken, olive oil, garlic powder, oregano, paprika, salt, and pepper. Marinate for 15 minutes.
