Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Fresh cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, paprika, garlic powder, salt, and pepper.
  3. Rub the mixture all over the chicken breasts.
  4. Grill chicken for 6-7 minutes per side, until cooked through.
  5. In another bowl, combine mango, red bell pepper, red onion, jalapeño, lime juice, and cilantro to make the salsa.
  6. Serve grilled chicken topped with mango salsa.

Notes
