Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 ripe mango, diced
1/2 red onion, finely chopped
1 jalapeño, seeds removed and finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt to taste

Instructions
1. Preheat your grill to medium-high heat.
2. In a bowl, mix the olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with the mixture.
3. Grill the chicken on medium-high heat for about 7-8 minutes on each side or until fully cooked.
4. While the chicken is grilling, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, and salt in a separate bowl.
5. Once the chicken is cooked, let it rest for a few minutes, then top with the mango salsa and serve.
Notes
You can substitute the mango with pineapple for a different flavor.
Adjust the spiciness of the salsa by adding more or less jalapeño.
