Description

A Hawaiian backyard classic, this Grilled Huli Huli Chicken features sweet, savory, and slightly tangy flavors, perfect for weeknight dinners and gatherings.

Ingredients

  • 4 pounds of boneless (skinless chicken thighs or breasts)
  • 1 cup of unsweetened pineapple juice
  • ½ cup of soy sauce
  • ½ cup of brown sugar
  • ⅓ cup of ketchup
  • ¼ cup of chicken broth
  • 2 teaspoons of freshly grated ginger
  • 1 ½ teaspoons of minced garlic
  • Sliced green onions for topping

Instructions

  1. 1. In a medium bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic. Whisk until thoroughly mixed and until brown sugar dissolves as much as possible.
  2. 2. Reserve 1 cup of the sauce for basting.
  3. 3. In a ziplock bag, combine the remaining sauce with chicken for marination. Marinate for at least 3 hours, preferably overnight.
  4. 4. Preheat the grill to medium heat (350–400°F or 175–205°C) and oil the grates lightly.
  5. 5. Grill chicken for 6–8 minutes per side, or until cooked through and internal temperature reaches 165°F.
  6. 6. In the last 5 minutes, baste the chicken with the reserved marinade.
  7. 7. Let the chicken rest for 5 minutes before serving. Optional: garnish with sliced green onions.
