A Hawaiian backyard classic, this Grilled Huli Huli Chicken features sweet, savory, and slightly tangy flavors, perfect for weeknight dinners and gatherings.
Ingredients
4 pounds of boneless (skinless chicken thighs or breasts)
1 cup of unsweetened pineapple juice
½ cup of soy sauce
½ cup of brown sugar
⅓ cup of ketchup
¼ cup of chicken broth
2 teaspoons of freshly grated ginger
1 ½ teaspoons of minced garlic
Sliced green onions for topping

Instructions
1. In a medium bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic. Whisk until thoroughly mixed and until brown sugar dissolves as much as possible.
2. Reserve 1 cup of the sauce for basting.
3. In a ziplock bag, combine the remaining sauce with chicken for marination. Marinate for at least 3 hours, preferably overnight.
4. Preheat the grill to medium heat (350–400°F or 175–205°C) and oil the grates lightly.
5. Grill chicken for 6–8 minutes per side, or until cooked through and internal temperature reaches 165°F.
6. In the last 5 minutes, baste the chicken with the reserved marinade.
7. Let the chicken rest for 5 minutes before serving. Optional: garnish with sliced green onions.
