Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh parsley, chopped
  • For the Creamy Garlic Sauce:
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Combine shrimp, olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl; marinate for 15-20 minutes.
