Description

Hearty ground beef enchiladas filled with seasoned beef, topped with enchilada sauce and melted cheese, perfect for family dinners and gatherings.

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Optional toppings: sour cream, fresh cilantro, avocado slices

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a skillet, brown the ground beef and onions over medium heat for 5-7 minutes.
  3. 3. Add garlic, cumin, and chili powder. Sauté for 1 minute.
  4. 4. Spoon the beef mixture into tortillas, roll tightly, and place seam-side down in a greased baking dish.
  5. 5. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  6. 6. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  7. 7. Allow to cool slightly, then serve with optional toppings.
