Ingredients
2 medium sweet potatoes, peeled and cubed
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
2 teaspoons dried rosemary, crushed
1 pound lean ground turkey
1 medium yellow onion, diced
1 can (14.5 ounce) vegetable broth (about 2 cups)
1 3/4 cups whole milk
1 cup basmati rice, uncooked
2 cups shredded cheddar cheese
2 teaspoons chopped parsley

Instructions
1. Preheat your oven to 400°F.
2. Peel and cube the sweet potatoes into 1-inch chunks. Place them in a 9×13 inch casserole dish, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and rosemary. Toss to coat evenly.
3. Bake the sweet potatoes uncovered for 30 minutes.
4. While the sweet potatoes are roasting, brown the ground turkey in a large skillet over medium-high heat. After browning, add the diced onion and sauté for 3 to 5 minutes.
5. Remove the casserole from the oven and add the turkey mixture, vegetable broth, milk, and uncooked rice. Stir to combine.
6. Return the casserole to the oven and bake uncovered for an additional 15 minutes.
7. Sprinkle the shredded cheddar cheese over the top and bake for another 10 minutes until melted and bubbly.
8. Let rest for 10 to 15 minutes before serving and garnish with chopped parsley.
