Hasselback Potatoes

Description

Crispy on the outside and fluffy on the inside, Hasselback potatoes are a visually stunning and delicious side dish for any occasion.

Ingredients

  • 4 large russet potatoes, washed and patted dry
  • 4 tablespoons unsalted butter, melted, divided
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • Salt and pepper, to taste

Instructions

  1. 1. Preheat the oven to 425°F and set aside an unlined baking sheet.
  2. 2. Position one potato in between two chopsticks or skewers.
  3. 3. Cut vertical slits ⅛ inch apart in the potato, leaving the bottom intact.
  4. 4. Repeat for the remaining potatoes.
  5. 5. Place potatoes on the baking dish and brush with half of the melted butter.
  6. 6. Season with salt and pepper.
  7. 7. Bake for 30 minutes.
  8. 8. Gently pull the layers apart and brush with the remaining melted butter.
  9. 9. Bake for an additional 30-35 minutes until crispy on the outside and tender inside.
  10. 10. Serve warm and add more salt and pepper to taste.
