4 medium-sized russet or Yukon gold potatoes
1/4 cup olive oil
Salt, to taste
Pepper, to taste

Instructions
1. Preheat your oven to 425°F (220°C).
2. Wash the potatoes and pat them dry. Carefully slice each potato about 1/4 inch apart without cutting all the way through.
3. Place the sliced potatoes in a baking dish, drizzle with olive oil, and season with salt, pepper, and fresh herbs. Insert garlic slices between some of the slices if desired.
