Description

Ingredients

  • 1 cup lentils
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. 1. In a large pot, sauté the onion and garlic until translucent.
  2. 2. Add the carrots and celery, and cook for another 5 minutes.
  3. 3. Stir in the lentils, thyme, salt, and pepper.

  5. 5. Reduce the heat and simmer for about 30 minutes, or until the lentils are tender.
