Description

A friendly and warming soup filled with bright vegetables and hearty chickpeas, perfect for nourishing weeknight dinners and healthy lunches.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened, about 5 minutes.
  2. 2. Stir in garlic, zucchini, bell pepper, and green beans. Cook for another 5 minutes.
  3. 3. Add chickpeas, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20–30 minutes.
  4. 4. Taste and adjust seasoning as needed.
  5. 5. Serve hot, garnished with fresh parsley.
