Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sweet sausage, casing removed
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced red bell pepper
  • 4 cloves minced garlic
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 4 cups diced fresh plum tomatoes
  • 2 cups diced zucchini
  • 4 cups vegetable or chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Parmesan rinds (optional)
  • 1/4 cup fresh basil, torn
  • 1 tablespoon fresh oregano
  • Salt and black pepper to taste

Instructions

  1. 1. Heat olive oil in a large soup pot over medium high heat until shimmering.
  2. 2. Add Italian sausage and brown it, breaking it apart with a spoon.
  3. 3. Drain excess grease if necessary.
  4. 4. Add diced onion, celery, carrots, and red bell pepper; sauté for about 4 minutes until softened.
  5. 5. Create a small well in the pot, add minced garlic, red pepper flakes, and tomato paste, and cook for 2 minutes while stirring.
  6. 6. Stir in diced plum tomatoes, zucchini, salt, pepper, vegetable broth, Parmesan cheese, rinds (if using), basil, and oregano; mix gently.
  7. 7. Simmer for 10 to 15 minutes until vegetables are tender and flavors marry. Taste and adjust seasoning.
  8. 8. Remove Parmesan rinds, ladle into bowls, and garnish with extra grated Parmesan and fresh basil. Serve hot.
