Ingredients
2 pounds potatoes
3 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons rosemary
2 teaspoons thyme
1 teaspoon salt
1/2 teaspoon pepper

Instructions
1. Preheat the oven to 425°F (220°C).
2. Wash and cut the potatoes into bite-sized pieces.
3. In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
4. Spread the potatoes on a baking sheet in a single layer.
5. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through.
6. Serve hot as a side dish.
