High Protein Sweet Potato Harissa Pasta

Description
A hearty and nutritious pasta dish featuring sweet potatoes, silken tofu, and a kick of harissa.
Ingredients
1 small sweet potato – cubed (about 2 cups)
1 bulb garlic – top cut off
1 block silken tofu
1 cup reserved pasta water (heavily salted)
¼ cup harissa paste
½ teaspoon oregano
2 tablespoons tomato paste
½ teaspoon paprika
Salt to taste (about ½ teaspoon recommended)
Pepper to taste (about ¼ teaspoon recommended)
Juice from ½ lemon
½ box pasta (or 1 full box if using Banza)
½ cup finely chopped basil or parsley (for topping)

Instructions
1. Preheat the oven to 400°F (approx. 200°C).
2. Add sweet potato and garlic to a sheet pan lined with parchment paper. Lightly coat with oil, salt, and pepper.
3. Roast for 40-45 minutes, until browned.
4. Add roasted sweet potato and garlic cloves to a blender along with other sauce ingredients. Blend until smooth.
5. Mix sauce with cooked pasta and top with basil. Serve warm and enjoy!
