Homemade Enchirito

Description

A fast and comforting homemade version of the Enchirito, filled with ground beef, refried beans, and melted cheese.

Ingredients

  • 1 pound ground beef
  • 1 can refried beans
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 2 tablespoons sour cream (optional)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. 3. Add refried beans to the skillet with the beef and mix well. Season with salt and pepper to taste.
  4. 4. Spread a spoonful of the beef and bean mixture along the center of each tortilla, then top with cheese, onions, and tomatoes.
  5. 5. Roll the tortillas tightly, folding in the sides to keep the filling inside.
  6. 6. Place the rolled enchiritos seam-side down in a baking dish.
  7. 7. Pour the enchilada sauce over the top and sprinkle with additional cheese.
  8. 8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. 9. Serve warm, garnished with sour cream if desired.
