Description

Delightful pumpkin cupcakes that bring the flavors of fall right into your kitchen, topped with cream cheese frosting.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup brown sugar

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. 2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. 3. In another bowl, mix vegetable oil, sugar, brown sugar, and eggs until well combined.
  4. 4. Stir in pumpkin puree and vanilla extract.
  5. 5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. 6. Fill cupcake liners about 2/3 full with batter.
  7. 7. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  8. 8. For the frosting, beat cream cheese and butter until smooth.
  9. 9. Gradually add powdered sugar and brown sugar, beating until fluffy.
