Delicious, homemade cheese pizza pockets that are perfect for any occasion, combining melted cheese with customizable fillings in a crispy outer shell.

Ingredients

  • 1 pack chilled pizza dough (or puff pastry/croissant dough)
  • 1 tablespoon tomato or pizza sauce
  • 180g shredded mozzarella cheese
  • 25g freshly grated Parmesan cheese
  • 30g sliced bell peppers, mushrooms, or olives (optional)
  • 1 teaspoon Italian herbs
  • Optional: mini pepperoni or diced cooked sausage
  • 1 beaten egg (for brushing)
  • Dried oregano or garlic powder (for topping, optional)

Instructions

  1. 1. Preheat your oven to 200°C (400°F) or air fryer to 190°C (375°F).
  2. 2. Prepare your baking sheet by lining it with parchment paper.
  3. 3. Roll out the pizza dough on a floured surface until about ¼ inch thick.
  4. 4. Cut the dough into rectangles or circles, approximately 10 by 15 cm (4 by 6 inches).
  5. 5. Spread about 1 tablespoon of sauce in the center of each piece of dough.
  6. 6. Add shredded mozzarella and Parmesan cheese on top of the sauce.
  7. 7. Incorporate any desired veggies and sprinkle Italian herbs.
  8. 8. Fold the dough over the filling and seal the edges with a fork.
  9. 9. Brush the pockets with a beaten egg and sprinkle with optional seasonings.
  10. 10. Bake for 15–18 minutes or air fry for 8–10 minutes, flipping halfway.
