Ingredients

  • 4 large Russet & Yukon Gold potatoes, peeled & chopped
  • 6 slices thick-cut bacon
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1. Preheat the oven to 400°F (200°C) and line a baking sheet with foil.
  2. 2. In a skillet over medium heat, cook the bacon until crispy, about 6–10 minutes. Transfer to a paper towel-lined plate and chop into pieces, reserving 1–2 tablespoons of bacon grease.
  3. 3. Toss the potatoes in a bowl with olive oil, reserved bacon grease, garlic, salt, pepper, and onion powder.
  4. 4. Spread the potatoes on the baking sheet and roast for 30–35 minutes, stirring halfway through.
  5. 5. Drizzle honey over the potatoes and sprinkle with bacon; return to the oven for another 5 minutes.
  6. 6. Remove from oven, toss with parsley, and serve hot.
