Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • Oil for frying (vegetable or canola)
  • 1/4 cup unsalted butter, softened (for honey butter)
  • 2 tablespoons honey (for honey butter)

Instructions

  1. 1. Prep your ingredients and equipment. Measure dry ingredients into one bowl and wet ingredients into another.
  2. 2. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. 3. In another bowl, whisk the milk, melted butter, and egg until smooth. Combine with dry ingredients, stirring until just mixed.
  4. 4. Heat 2–3 inches of oil in a deep pot to about 350°F (175°C).
  5. 5. Drop spoonfuls of batter into hot oil, frying until golden brown on all sides, about 2–3 minutes.
  6. 6. Drain poppers on paper towels and let rest.
  7. 7. Beat softened butter with honey to make honey butter.
  8. 8. Serve warm with honey butter for dipping or drizzle on top.
