Description

Sweet and spicy Hot Honey Feta Chicken, easy to prepare and perfect for weeknights or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

  1. 1. In a medium bowl, combine honey, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk until well blended.
  2. 2. Taste the marinade and adjust seasoning if necessary.
  3. 3. Place chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken and coat well.
  4. 4. Refrigerate the chicken for at least 30 minutes, preferably 2 to 4 hours.
  5. 5. In a small bowl, combine crumbled feta cheese with a drizzle of olive oil, a pinch of salt, and black pepper. Mix gently and set aside.
  6. 6. Preheat your oven to 400°F (200°C). Remove chicken from marinade, let excess drip off, and discard the marinade. Place chicken in a baking dish.
  7. 7. Spoon the feta mixture evenly over each chicken breast.
  8. 8. Bake for 25 to 30 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and feta is golden.
  9. 9. Let the chicken rest for about 5 minutes before serving.
  10. 10. Garnish with freshly chopped parsley and serve warm, drizzled with juices from the baking dish.
