Description

Ingredients
1 lb Italian sausage, casings removed
1 tablespoon olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb gnocchi, store-bought

Instructions
1. In a large skillet over medium heat, add the Italian sausage and cook until browned, breaking it apart as it cooks. Drain any excess fat, if necessary.
3. Stir in the cherry tomatoes and fresh spinach, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes.
4. Reduce the heat to low, then pour in the heavy cream. Add the grated Parmesan cheese, Italian seasoning, salt, and black pepper. Stir until the cheese melts and the sauce is creamy.
5. In a separate pot, cook the gnocchi according to the package instructions. Drain and add the cooked gnocchi to the skillet, stirring to combine with the creamy sauce.
