Description

Ingredients

  • 1 pound Italian sausage (sweet or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 cup uncooked pasta (shells or penne)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach or kale (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. 1. In a large pot, cook the Italian sausage over medium heat until browned. Break it into pieces as it cooks.
  2. 2. Add the diced onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes, until the vegetables soften.
  3. 3. Stir in the diced tomatoes, chicken broth, and Italian seasoning. Bring the mixture to a simmer.
  4. 4. Add the uncooked pasta and cook according to the package instructions, usually about 8-10 minutes, until the pasta is tender.
  5. 5. If using, stir in fresh spinach or kale at the end. Allow it to wilt for a few minutes.
