Description

Ingredients

  • 2 large Russet potatoes
  • Olive oil
  • Coarse salt
  • Butter (for serving)
  • Optional toppings: cheese, sour cream, chives, beans, or roasted vegetables

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Scrub the potatoes under running water to clean.
  3. 3. Prick the tops of each potato with a fork, drizzle with olive oil, and sprinkle with coarse salt.
  4. 4. Place the potatoes directly on the oven rack and bake for 1 hour, flipping halfway through.
  5. 5. Once cooked, cut a cross on top of each potato, squeeze the sides to fluff, and serve with butter and toppings.
