Description

A comforting and tasty dish combining tender beef, hearty vegetables, and rich curry flavors, perfect for a family dinner.

Ingredients

  • 1 lb beef (chuck or sirloin), cut into bite-sized pieces
  • 2 medium onions, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons curry powder
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. 1. Heat the oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  2. 2. Increase the heat to medium-high and add the beef. Cook until the beef is browned on all sides.
  3. 3. Stir in the curry powder and cook for another minute.
  4. 4. Add the carrots, potatoes, and beef broth. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the beef and vegetables are tender.
