Ingredients
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
2 tablespoons sugar
Butter for cooking
Maple syrup and toppings for serving

Instructions
1. In a bowl, separate the egg whites and yolks.
2. Whisk the egg yolks with milk and vanilla extract.
3. In another bowl, mix flour, sugar, and baking powder together.
4. Combine the wet and dry ingredients until just mixed. Don’t over mix.
5. In a separate bowl, beat the egg whites until stiff peaks form.
6. Gently fold the egg whites into the pancake batter.
7. Heat a non-stick skillet over low heat and grease it with butter.
8. Pour a small amount of batter into the skillet, cover with a lid, and cook for 4-5 minutes until bubbles form on top.
9. Flip the pancake carefully and cook for an additional 4-5 minutes.
10. Serve warm with maple syrup and your choice of toppings.
