Description

Incredibly fluffy and light pancakes that rise beautifully, creating a delightful treat for breakfast or brunch.

Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • Butter for cooking
  • Maple syrup (optional)
  • Fresh fruits (optional)

Instructions

  1. 1. Separate the egg whites and yolks into two bowls.
  2. 2. In the bowl with yolks, add milk and vanilla extract, and mix until combined.
  3. 3. Sift in flour and baking powder, and mix until smooth.
  4. 4. In the other bowl, whip the egg whites until foamy, then gradually add sugar and whip until stiff peaks form.
  5. 5. Gently fold the egg whites into the yolk mixture until just combined.
  6. 6. Heat a non-stick skillet over low heat and add a little butter.
  7. 7. Pour batter into the skillet, using a ring mold if desired, and cover with a lid. Cook for about 3–4 minutes on each side.
  8. 8. Stack the pancakes and serve with maple syrup and fresh fruits.
