Description

A cozy, one-pot Lasagna Soup that combines all the flavors of traditional lasagna into a comforting, spoonable dish, perfect for weeknight dinners.

Ingredients

  • 2 cups pasta
  • 4 cups savory tomato broth
  • 2 teaspoons Italian seasoning
  • 1 cup creamy ricotta
  • 1/2 cup grated Parmesan cheese
  • 1 lb ground meat (optional)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. 1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until soft and translucent, about 4–6 minutes.
  2. 2. If using, add ground meat and cook until browned, season lightly with salt and pepper.
  3. 3. Stir in the tomato broth and Italian seasoning, bringing to a simmer. Adjust salt and pepper as needed.
  4. 4. Add pasta and cook according to package instructions until al dente.
  5. 5. Once pasta is cooked, remove from heat and stir in ricotta cheese until blended and creamy.
  6. 6. Serve hot, topped with grated Parmesan cheese and optional garnishes like fresh basil or crushed red pepper.
