Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups green beans, trimmed
  • 1/2 cup unsalted butter
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. 1. Season the chicken breasts with salt, pepper, and thyme.
  2. 2. In a large skillet, heat olive oil over medium heat.
  3. 3. Add chicken breasts and cook until golden brown, about 5-7 minutes per side.
  4. 4. In a separate pot, bring water to a boil and blanch the green beans for 2-3 minutes until vibrant green.
  5. 5. Remove chicken, and in the same skillet, add butter and minced garlic, cooking until fragrant.
  6. 6. Stir in lemon juice, returning chicken to the skillet and adding green beans.
  7. 7. Toss gently to coat chicken and green beans in the sauce.
  8. 8. Serve hot, garnished with fresh parsley.

Notes

  1. Feel free to substitute chicken thighs if preferred. This dish can easily be doubled for larger gatherings.
