Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup unsalted butter
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound fresh green beans
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. 1. In a large skillet, melt butter over medium heat.
  2. 2. Add garlic and sauté until fragrant.
  3. 3. Season chicken with salt, pepper, and thyme, then add to the skillet.
  4. 4. Cook chicken for about 5-7 minutes on each side, until golden brown.
  5. 5. Squeeze lemon juice over the chicken, cover, and cook for another 5 minutes.
  6. 6. In a separate pot, bring water to a boil and blanch green beans for 3 minutes.
  7. 7. Drain and toss the green beans with olive oil and red pepper flakes.
  8. 8. Serve chicken with green beans on the side, drizzled with pan sauce.

Notes

  1. For a richer flavor, let the chicken marinate in the lemon juice and garlic for 30 minutes before cooking.
  2. If you prefer a thicker sauce, add a tablespoon of cornstarch mixed with a little water to the pan in the last few minutes of cooking.
