Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of butter
  • 1 lemon, juiced and zested
  • 2 cups of fresh green beans
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Season the chicken breasts with salt and pepper on both sides.
  2. 2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
  3. 3. Add the chicken breasts and cook for about 6-7 minutes on each side until they're golden brown and cooked through.
  4. 4. Remove the chicken from the skillet and set aside.
  5. 5. In the same skillet, add the minced garlic and sauté for 1 minute.
  6. 6. Add the green beans and cook for 4-5 minutes until tender and bright green.
  7. 7. Stir in the lemon juice, lemon zest, and remaining butter, mixing well.
  8. 8. Return the chicken to the skillet and simmer for an additional 2 minutes.
  9. 9. Garnish with fresh parsley before serving.

Notes
