Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon (about 1 teaspoon)
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Optional: extra Parmesan and lemon slices for garnish

Instructions

  1. 1. Pound the chicken breasts to an even thickness (about ½ inch) and season with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes on each side until golden brown and cooked through.
  3. 3. Remove chicken and set aside. In the same pan, add garlic and cook until fragrant. Add chicken broth, lemon juice, and zest; simmer.
