Description

Deliciously crispy potato skins filled with gooey eggs, melted cheddar, and crumbled bacon, perfect for breakfast or a snack.

Ingredients

  • 4 large russet potatoes
  • 6 slices of cooked bacon, crumbled
  • 1 cup of shredded cheddar cheese
  • 4 eggs
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Bake the potatoes until tender, about 45 to 60 minutes.
  3. 3. Slice potatoes in half and scoop out some flesh to create a sturdy ‘boat’.
  4. 4. Fill with cheddar cheese and crumbled bacon.
  5. 5. Crack one egg into each potato skin.
  6. 6. Place on baking sheet and bake for 10 to 15 minutes until eggs are set.
  7. 7. Sprinkle with green onions and season with salt and pepper.
  8. 8. Serve hot and enjoy!
