Description

These Loaded Buffalo Mac & Cheese Nuggets combine creamy mac and cheese with a spicy kick, all encased in crunchy golden nuggets for the perfect snack or party food.

Ingredients

  • 2 cups cooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1 cup shredded cooked chicken
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Oil for frying (vegetable or canola)
  • Ranch dressing for serving

Instructions

  1. 1. In a bowl, combine macaroni, cheddar, mozzarella, cream cheese, buffalo sauce, and chicken. Stir until everything is well coated. Chill for 30 minutes.
  2. 2. Scoop the chilled mixture into bite-sized nuggets using a cookie scoop or your hands. Press gently to compact each nugget and keep them cool.
  3. 3. Dip each nugget in beaten egg, then coat with breadcrumbs, ensuring each nugget is fully covered. Set aside.
  4. 4. Heat oil to 350°F (175°C) and fry nuggets in batches for 2 to 3 minutes until golden. Drain on paper towels and serve with ranch and extra buffalo sauce.
