Description

A comforting loaded potato soup that combines the best parts of a baked potato in a creamy, savory bowl.

Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1/2 cup milk (optional)

Instructions

  1. 1. In a large pot, melt butter over medium heat and add the diced potatoes. Cook for about 5 minutes.
  2. 2. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. 3. Using a potato masher or immersion blender, mash some of the potatoes to thicken the soup to your desired consistency.
  4. 4. Stir in the shredded cheddar cheese and sour cream until melted and well combined.
  5. 5. Add the milk if you prefer a creamier texture.
  6. 6. Season with salt and pepper to taste.
