Description

A creamy, cheesy potato soup that’s the ultimate comfort food, loaded with bacon and fresh toppings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 6 slices crispy bacon, chopped
  • 4 green onions, sliced
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. 1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and drain excess fat, leaving a little for flavor.
  2. 2. Add the diced potatoes, garlic, and broth to the pot. Bring it to a boil and then lower the heat to simmer for about 15–20 minutes until the potatoes are tender.
  3. 3. Mash some of the potatoes in the pot for a thicker texture.
  4. 4. Stir in the heavy cream and cheddar cheese until melted and combined.
  5. 5. Season with salt and pepper to taste.
  6. 6. Serve hot, garnished with crispy bacon and green onions.
