Description

A nutritious and delicious dish featuring roasted sweet potatoes topped with black beans and fresh toppings, perfect for sharing.

Ingredients

  • 2 large sweet potatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. 3. Drizzle with olive oil, and season with salt and pepper.
  4. 4. Bake the sweet potatoes for about 45-60 minutes, or until they are tender.
  5. 5. While the sweet potatoes are baking, prepare the toppings by combining black beans, corn, cherry tomatoes, red onion, cilantro, lime juice, and seasoning with salt and pepper in a bowl.
  6. 6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  7. 7. Cut the sweet potatoes open and fluff the insides with a fork.
  8. 8. Top with the black bean mixture and diced avocado.
  9. 9. Serve warm.
