Ingredients

  • 1 large eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: fresh herbs like parsley or basil for garnish

Instructions

  1. 1. Wash the eggplant thoroughly, cut off the stem, and slice into ½-inch thick rounds or half-moons.
  2. 2. Place the sliced eggplant in a colander, sprinkle with salt, and let sit for about 30 minutes.
  3. 3. Rinse the eggplant slices under cold water and pat dry.
  4. 4. In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  5. 5. Toss the dried eggplant slices in the marinade until well coated.
