  • 1 large egg, beaten
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil
  • 6–8 pineapple rings
  • 1/4 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon (for coating)

Instructions

  1. 1. Prepare the pineapple by draining canned rings or slicing fresh pineapple into rings and patting them dry.
  2. 2. Mix the dry ingredients together in a medium bowl.
  3. 3. Combine the wet ingredients in a separate bowl and whisk until smooth.
  4. 4. Make the batter by gently combining wet and dry ingredients until just mixed.
  5. 5. Heat vegetable oil in a large pot to 350°F (175°C).
