Ingredients

  • 5 pound boneless pork shoulder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon ground cinnamon
  • 2 yellow onions, sliced
  • 2 teaspoons Dijon mustard
  • 6 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 2 1/2 cups apple cider
  • 1/4 cup apple cider vinegar

Instructions

  1. 1. Mix salt, pepper, smoked paprika, and cinnamon in a small bowl to create a dry rub.
  2. 2. Rub the dry spice mixture all over the pork shoulder.
  3. 3. In your slow cooker, layer the sliced onions at the bottom and combine with Dijon mustard, minced garlic, and fresh thyme.
  4. 4. Place the seasoned pork shoulder on top of the onion mixture.
  5. 5. Pour the apple cider and apple cider vinegar around the pork without disturbing the seasoning.
  6. 6. Cover and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until fork-tender.
  7. 7. Remove the pork and shred it with two forks, then return it to the slow cooker and stir into the juices.
