Description

Ingredients
1 lb pasta (such as penne or fettuccine)
1 lb Italian sausage (casings removed)
3 cloves garlic (minced)
1/2 cup sun-dried tomatoes (chopped)
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon olive oil

Instructions
1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Crumble in the Italian sausage and cook, stirring occasionally, until browned (about 5 to 7 minutes). Remove the sausage from the skillet and set aside.
3. In the same skillet, add the minced garlic and sun-dried tomatoes. Cook for 1 to 2 minutes, stirring frequently until fragrant.
4. Deglaze the skillet with a splash of chicken broth, scraping up any browned bits from the bottom of the pan.
5. Add the remaining chicken broth and heavy cream to the skillet. Stir in the Parmesan cheese and let the sauce simmer for about 5 minutes or until it thickens slightly.
6. Add the cooked sausage and pasta to the skillet, tossing everything together until the pasta is well coated in the creamy sauce. Add a splash of pasta water if needed.
7. Season with salt, black pepper, and red pepper flakes if using. Taste and adjust seasoning before serving.
