Ingredients
500g ground meat (beef or pork)
1 onion, chopped
2 cloves of garlic, minced
1 egg
100g breadcrumbs
Salt and pepper to taste
1 teaspoon paprika
Olive oil for drizzling

Instructions
1. Preheat your oven to 200°C (400°F).
2. In a large mixing bowl, combine the ground meat, onion, garlic, egg, breadcrumbs, salt, pepper, and paprika. Mix until well combined, but don’t over-mix.
3. Shape the mixture into a loaf and transfer it into a baking dish.
4. Halve the potatoes and arrange them around the meatloaf in the same baking dish. Drizzle with olive oil, sprinkle with salt and pepper, and toss.
5. Bake in the preheated oven for about 1 hour until the meatloaf is cooked through and the potatoes are tender.
6. Remove from the oven and let the meatloaf rest for a few minutes before slicing.
7. Garnish with fresh herbs like parsley or thyme and serve with roasted potatoes.
