Ingredients

  • 2 tablespoon olive oil
  • 2 pound boneless, skinless chicken thighs or breasts
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 4 cup fresh spinach
  • 1/2 cup crumbled feta cheese
  • 2 tablespoon lemon juice

Instructions

  1. 1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. 2. Slice the chicken into bite-sized pieces and season with smoked paprika, oregano, salt, and pepper.
  3. 3. Add the chicken to the skillet and cook for 10–15 minutes, until cooked through and browned.
  4. 4. Remove the chicken, tent with foil, and set aside.
  5. 5. Add garlic to the skillet and cook for 30 seconds until fragrant.
  6. 6. Add cherry tomatoes and cook for 2–3 minutes until softened.
  7. 7. Incorporate fresh spinach and cook until wilted, about 2–3 minutes.
  8. 8. Return the chicken to the skillet, toss to combine, and heat through.
