Ingredients

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup barbecue sauce
  • 1/2 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. 1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat and sauté bell peppers and red onion until soft.
  3. 3. Stir in the cooked chicken and barbecue sauce, and mix until heated through.
  4. 4. Add the cooked spaghetti to the skillet and toss to combine.
  5. 5. Top with Monterey Jack cheese and cover until cheese is melted.
