Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. 1. In a large pan, heat olive oil over medium heat.
  2. 2. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. 3. In the same pan, add minced garlic and cook for about 1 minute.
  4. 4. Add the orzo to the pan and stir for a minute, coating it in the oil.
  5. 5. Pour in the chicken broth and balsamic vinegar, bringing the mixture to a boil.
  6. 6. Once boiling, reduce to a simmer and cover the pan. Cook for about 10 minutes or until the orzo is tender and absorbs the liquid.
  7. 7. Stir in the cherry tomatoes and spinach. The heat will wilt the spinach.
  8. 8. Return the cooked chicken to the pan, cover, and cook for an additional 3-4 minutes to heat through.
