Ingredients

  • 1 pound boneless skinless chicken breast, cubed
  • 1 tablespoon olive oil (plus extra if needed)
  • 1 teaspoon garlic powder
  • 1 tablespoon Cajun seasoning (divided)
  • 1 onion, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup chicken stock
  • Salt and pepper to taste
  • Optional garnish: fresh parsley and a pinch of red chili pepper flakes

Instructions

  1. 1. Season cubed chicken with salt, pepper, garlic powder, and half of the Cajun seasoning. Drizzle with olive oil and mix.
  2. 2. Heat skillet over medium-high heat, add chicken, and cook for 5–7 minutes until golden brown. Remove and set aside.
  3. 3. Add more olive oil to skillet if needed, sauté onion for about 2 minutes.
  4. 4. Add broccoli, zucchini, and bell pepper with remaining Cajun seasoning; cook for 5–6 minutes until crisp-tender.
  5. 5. Deglaze the pan with chicken stock, scraping up browned bits; return chicken to skillet and simmer for 2–3 minutes.
  6. 6. Garnish with fresh parsley and red chili flakes. Serve immediately.
