Description

Crispy on the outside and fluffy on the inside, these oven-roasted garlic and herb potatoes are bursting with flavor.

Ingredients

  • 4 large potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. 1. Preheat the oven to 425°F (220°C).
  2. 2. Wash and peel the potatoes, then cut them into wedges or cubes.
  3. 3. In a large bowl, toss the potato pieces with olive oil, minced garlic, oregano, thyme, salt, and pepper until well coated.
  4. 4. Spread the potatoes in a single layer on a baking sheet.
  5. 5. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
  6. 6. Remove from the oven and garnish with fresh parsley if desired. Serve hot.
