Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. In a bowl, mix the olive oil, garlic powder, oregano, salt, and pepper.
  3. 3. Coat the chicken breasts in the olive oil mixture and place them in a baking dish.
  4. 4. Toss the halved potatoes in the remaining mixture and spread them around the chicken.
  5. 5. Sprinkle the Parmesan cheese over the chicken and potatoes.
  6. 6. Bake for 25–30 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
