Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil (plus extra for tossing potatoes)
  • Salt and pepper to taste
  • 2 cups baby potatoes, halved
  • 2 tablespoons fresh herbs (like rosemary or thyme), chopped

Instructions

  1. 1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. In a bowl, combine grated Parmesan cheese, breadcrumbs, salt, and pepper for coating.
  3. 3. Drizzle chicken breasts with olive oil, then coat with the Parmesan-breadcrumb mixture.
